This non malted raw cereal is subjected to a special treatment by which the grains are heated in order to weaken the protein structure and make starches more accessible to the enzymes.
It can be used in the same way of flaked wheat, making easier the starches melting in water during mashing, thus helping the transformation process and the total efficiency.
Recommended for brewing Pale Ale, Bitter and Stout.
