Caraway or German cumin (Carum carvi) is a very common biennal plant in the family Apiaceae native to Europe and Central-West Asia.
The fruits, usually used whole, have a pungent, anise-like flavour and aroma that comes from essential oils, mostly carvone and limonene. They are used to add flavours to some strong-tasting cheeses such as Gorgonzola. Mixed with flour they give a peculiar and agreeable spicy flavour to bread, rye bread, crackers, cookies and cakes. Caraway seeds are also used to prepare kummel liqueur, used as digestif.
