Cinnamon (Cinnamomum verum, also known as Cinnamomum zeylanicum) is a spice obtained from the namesake tree, very aromatic and belonging to the family Lauraceae. The bark of such a tree, after that cork and the underlying parenchyma are removed, is fragmented, rolled in multilayer cylinders and dehydrated: the obtained sticks are reddish brown and have a characteristic sweet and spicy aroma.
Cinnamon can be used in some types of beer, especially the Belgian Biere Blanche, Gran Cru, Triple and Christmas Beer. Usually it is added during the last 15 minutes of boiling.
