A type of sugar with a complex molecular structure which is not fermented by yeasts and thus makes the beer sweet.
Its typical use is for milk-stouts, dark beers with pronounced roasted notes, in which lactose, sugar derivative from milk, gives sweetness and a certain creaminess: a beer style which is considered to be created by John Henry Johnson in 1875 and made famous by Mackenson Brewery in 1907.
